Bee's Light Spring Soup with Dumplings

It is only January. Sleet and freezing rain is in the forecast for the next 24 hours. There is nothing better then a good soup, that reminds me of spring. Soup: 1/2 celery root, cleaned and cut 4  carrots, cleaned and cut  1 large onion coarsly cut 2tbsp of veggie oil 1 cup of spinach cut into stripes 1 pack of chicken stock 1 pack of chicken bone stock 1 can of green peas flowers of 1 cauliflower head thyme, all spice, 2 bay leaves, salt, pepper Meat balls: 1 lbs of ground chicken 93/7 1/2 of an onion finely chopped 1 egg bread crumbs, salt, pepper Dumplings: 80g Semolina 40g butter at room temperature 1 egg salt, nutmeg Start with the dumplings, they need time to rest. Mix all of the ingredients in a bowl and let it stand at room temperature to rest. In a Dutch Oven add the veggie oil, the celery root, carrots and onion.
