Potato Salad Version 2

It was time to make potato salad again. This time a little different 6 medium potatoes (yukon gold) 1/4 cup of sour cream 2 tbsp mayo 1/2 small red onion finely chopped 2 spears of Famous Dave's spicy pickles finely chopped 2 tbsp of pickling liquid from the pickles 2 tbsp capers salt and pepper to taste Cook the potatoes unpeeled the day before. When done, remove the all the water, let them cool down and put them over night into the fridge. The next morning peel them and cut bite size 5mm thick sices. Add all the potatoes and remaining ingredients to a bowl, mix it up cover and back into the fridge it goes. By the evening all the spices should have mingled well. Serve with hot Wiener, to scrambled eggs or just some veggies. -Mahlzeit-  

Deconstructed Brats

I am not a big fan of brats. I decided to get the brats meat and then start experimenting with it. In Germany there is something like Leberkaese. It is pork meat, chopped very fine with a meat grinder and spices and then baked. The picture shows prague powder. This is not really needed if the baked brats are eaten within 3-4 days and kept in the fridge. 1/4 tsp of dried thyme 1/4 tsp of sage 1/2 tsp of salt free original Dash spice (see note 1) 1/2 tsp of ground Allspice  1/8 tsp of prague powder (optional) Not in the picture 1 small onion finely chopped 1/2 cup of finely chopped ice Mix all of this into blender and blend until it is smooth. Preheat the oven to 350F. In the mean time grease a baking from. I have 2 small ones. Divide the meat mixture and fill it into the forms. Cut some nice lines in the top. Bake in the oven for about 30 minutes. Check after 20 minutes, that the top does not burn. After 30 minutes, remove from the stove and let it cool down. Serve with a fresh toas...

German Style Potato Salad

It has been years since it had potato salad. There are so many recipes on the internet. This is mine. I use Yukon Gold potatoes. Per person count 2 medium potatoes. Cook them unpeeled until tender but not falling appart. Drain them and let them cool down and into the fridge they go. The dressing (for 6 potatoes): 1/3 cup of mayo 2 tbsp of white vinegar 1 1/2 tbsp finely chopped onion 1 tbsp Dijon mustard salt and pepper   hand full of fresh or frozen parsley chopped Optional some chopped hard boiled eggs or pickles.   In a bowl, mix all the dressing components. This bowl gets a cover and ends up in the fridge as well. The next morning slice the potatoes into about 5mm thick slices, add the dressing, mix and back into the fridge. 1.5h before meal time remove it from the fridge and let it come up to room temperature. The Other Fruit Salad

This is an easy and fast fruit salat.  I had the following things real ripe: 1/2 melon left over 1 peach 1 mango 2 tomatos 1/4 onion  Cut everything up and put it in a bowl. Make sure to capture the juices, that escape during cutting. Season with a bit of salt and pepper. Add the juice of a lime. Mix everything up. Let it stand in the fridge for 1h. -Mahlzeit-        

Pineapple Cucumber Salad

The pineapple on the countertop is now yellow. I think it is in the sweet spot.  I didn't want to make a Hawaiian toast or pizza.  There is a yummy prime rib waiting... as a great side salad a pineapple can work. After reading through several recipes, here is what I came up with 1/2 of a ripe pineapple cleaned and chopped into bite size pieces 1 avocado chopped into bite little bites 1 cucumber, pealed and chopped into pieces 1/2 white onion finely chopped 1 handful of cilantro chopped 1/2 of a hot pepper or jalapeno, with or without seeds (depending how spicy you like it), finely chopped  Dressing Juice of 1/2 of large line 1 tbsp of a good olive oil 2 tsp of a good honey (I love rapeseed honey, but any honey will do) 1 tsp of white vinegar Chop all the ingredients for the salad and mix them in a big bowl. Pomegranate Apple Salad with Poppy Seed Dressing

The grocery store had pomegranates on sale. I have no idea if it is season or not. I only bought one once before. A quick internet search and an apple and a box of mixed spring greens went into the cart. For the salad: 2 handful of mixes spring greens seeds of one pomegranate  1 apple sliced into bite size pieces (any variety is fine, I bought one that was on sale) 2 slices of water melon cut into bite size pieces 1/4 cup of feta crumbles (or more) For the dressing: 6 tbsp extra virgin olive oil 2 tbsp balsamic 1 heaping tsp agave sweetener or liquid honey 1 tsp of poppy seeds 1/4 tsp of ground black pepper In a bowl mix all the salad parts. In a small bowl mix all the dressing ingredients well. Then pure them over the salad and mix again. Left overs can go into the fridge and are still good for 2 days after preparation. -Mahlzeit-

Melon Cucumber Salad with Lime Mint Dressing

The inspiration came from I am a homesteader . I tried the balsamic honey dressing. May be I had the wrong honey or the wrong balsamic. I didn't like at all. I came up with the following: 5 cups of water melon pieces 1/2 cucumber sliced 1 cup of chopped fresh mango handful of fresh chopped mint 1 cup of grape tomatoes cut in half (any other tomato will work as well) 2 small finger thick slices of feta, cut into little pieces 1 red bell pepper cut into bite size pieces 2 tsp of extra virgin olive oil (use a good one) 1 tsp of balsamic vinegar (use a good one) juice of 1 fresh lime salt and pepper  In a big bowl mix all of this, salt and pepper to taste, cover with plastic wrap and set into the fridge for an hour or 2.  This can be a side salad or a full meal with a slice of fresh bread with butter. -Mahlzeit-  

1 Cup of Grits and Many Meals

Lunch: There was just not a lot of time to get a full lunch cooked. So something fast needs to be thought of. 5 min Quaker grits with cheese and a side salad.   Of course I forgot to read the label how to cook the grits. My way worked just fine. Add 1 cup of grits, 2 cups of water, 2 cups of 2% milk, stir, orver medium heat bring it to a boil, stir more when it starts cooking, turn down the heat a bit if it bubbles to much. In parallel, grate some cheese, This is smoked gouda and mozarella. Add the cheese after 5 minutes, cook for 2 more minutes and turn off the heat. -Mahlzeit- Dinner 1: 1 onion chopped, 3 eggs, 1/2 Eckrich turkey sausage, 2 slices of bacon, some bbq sauce. Cold grits, that is now solid, and can be sliced.  In a pan render the bacon, add the sausage slices and the chopped onions, let them get some color.
