Raspberries in a Salad?

I got some raspberries a couple of days ago. I love raspberries. I have a raspberry dressing. Why not add the raspberries into a salad. Here we go: Tomatoes, cut into small pieces Cucumber, peeled and cut into small pieces Onions, cut into small pieces mushrooms, sliced (optional) raspberries salt and pepper to taste raspberries dressing I was hoping that fresh raspberries would enhance the flavor of the dressing, but it didn't. A picture will follow. My main computer is in maintenance.  

Refreshing Mixed Green Salad

This is one of my favorite refreshing salads in the winter.  For all the fruits, it pays to use fresh and ripe fruits. 1 big handful mixed spring greens 3/4 cup of chopped pinapples 3/4 cup of  chopped water melon 1 pomegranade 1/4 of an onion finely chopped 2 tomatoes 5 fresh basil leaves finely cut  The dressing is easy 5 tbsp maple sirup juice of 1 fresh lime salt and pepper Cut everything up and mix in a bowl. I should sit for about 1 hour so the flavors can all mingle. With a slice of bread and butter it makes a meal by itself. It is also a great addition to any other full meal. -Mahlzeit-

What Has Egg Salad To Do With Potato Salad.

While I was making a potato salad, I decided to make an egg salad as well. The ingredients are almost the same, except for the potatoes and the sour cream. (One can add eggs to a potato salad btw) 6 large hard boiled eggs 2 tsp mayo 1/2 small red onion finely chopped 1/2 spear of Famous Dave's spicy pickles finely chopped  1 tbsp of pickling liquid from the pickles 1 tbsp of capers salt and pepper to taste On the internet I found the following instructions how to cook hard boiled eggs, so they never that that blue outline on the yolk. I only buy large eggs and that works very well. In a pot  add the eggs and make sure they are not stacked. They should be all laying flat. Cover with water about 1/2" above them. Put on high heat and bring to a boil. As soon as they are boiling (not just tiny bubbles are showing), set the timer to 6 minutes. When the timer barks, drain them. The Other Fruit Salad

This is an easy and fast fruit salat.  I had the following things real ripe: 1/2 melon left over 1 peach 1 mango 2 tomatos 1/4 onion  Cut everything up and put it in a bowl. Make sure to capture the juices, that escape during cutting. Season with a bit of salt and pepper. Add the juice of a lime. Mix everything up. Let it stand in the fridge for 1h. -Mahlzeit-        

Melon and Feta Salad

My fridge had 1/4 water melon sitting around. And there was some feta cheese left. Somewhere back in the back of my mind I seemed to remember they do go nice together and indeed they do. Melon together with mint is a winner as well. There is my simple salad. 1/4 melon chopped into bite size pieces 1/2 cup of chopped or crumbled feta 1 handful of fresh mint (frozen works as well)   salt and pepper to taste Dressing 2 tsp pomegranate molasses juice of 1 medium lime  Mix all of this in bowl, stir and let it marinate for 1h in the fridge. -Mahlzeit-

Mixed Fruit and Veggie Salad with Lime Dressing

This salad gives a little taste of spring. On Saturday I picked up a small bag of mixed greens and a water melon.  In a bowl mix 2 cups of mixed greens 2 cups of chopped into bite size chunks water melon 2 tomatoes, cut into a cubes 1 small cumber chopped 6 mushrooms sliced 1/2 onion slices into small pieces 1/2 cup of fresh mint (frozen works as well) salt and pepper to taste For the vinaigrette juice of 1 lime 2 tsp of extra virgin olive oil 2 tsp of pomegranate molasses  (honey or maple syrup will work as well) Mix all of this in a in a big bowl and put into the fridge for 1 hour. I like my salads cold. Serve with a fresh slice of bread or a warm dinner roll with butter. -Mahlzeit-

New Years Eve Dinner: Beef Rost, Chayote Hash, Mashed Potatoes, Cucumber Tomato Feta Salad and Bowle

This time I start off with the plate and then break it down:   Tomato Cucumber Feta Salad 1 shallot chopped 1 cup of arugula chopped 1/2 cup of flat leaf parsley 2 tomatoes cubed 1 medium cucumber peeled and sliced salt and pepper to taste 1 tbsp store bought lemon vinaigrette  Mix all of this in a bowl and set aside, so the flavors can mingle Chayote Hash Peel the chayotes, 2 of them is more then enough. Remove the pit in the middle. Cut into 1/4" pieces. In a frying pan add some veggie oil. Add 1 chopped shallot and let it get translucent. Add the chopped chayotes and a sliced clove of garlic. Add 1/4 tsp of cumin 1/4 tsp of tumeric 1/4 tsp of curry pepper Do not add any salt yet. Cover and over low heat saute for about 20-25 minutes. Stir occasionally. Mashed Potatoes Peel potatoes and cook them till tender. Drain the water and put them back on the heat, so the water can evaporate. Shake the pot every 15 seconds so the potatoes do not burn. Pomegranate, Cucumber, Feta, Melon Salad

This was actually my dinner tonight. The salad has   1 Pomegranade 1 medium cumber, peeled and cut into bite size pieces Water melon cut into bite size pieces 1 shallot  finely chopped   Feta cheese crumbles 6 cherry tomatoes cut into quarters juice of 1/2 lime some fresh mint leaves salt and pepper  Mix all of this in a bowl and voila, dinner or lunch is ready -Mahlzeit-  

Pineapple Cucumber Salad

The pineapple on the countertop is now yellow. I think it is in the sweet spot.  I didn't want to make a Hawaiian toast or pizza.  There is a yummy prime rib waiting... as a great side salad a pineapple can work. After reading through several recipes, here is what I came up with 1/2 of a ripe pineapple cleaned and chopped into bite size pieces 1 avocado chopped into bite little bites 1 cucumber, pealed and chopped into pieces 1/2 white onion finely chopped 1 handful of cilantro chopped 1/2 of a hot pepper or jalapeno, with or without seeds (depending how spicy you like it), finely chopped  Dressing Juice of 1/2 of large line 1 tbsp of a good olive oil 2 tsp of a good honey (I love rapeseed honey, but any honey will do) 1 tsp of white vinegar Chop all the ingredients for the salad and mix them in a big bowl. Mix everything for the dressing in a small ball and pour over the salad. Add salt and pepper to taste. Toss everything. Then put it into the fridge for at least 1h so ...
