Home made Crème Fraîche with Cowboy Steak

Yes, the  focus is on the Crème Fraîche. I know how to make quark. But really sometimes, I wish I have Crème Fraîche. And it is so easy. The base recipe is off the internet. Buttermilk and heavy creme. The more sites one reads, the more ratios one can get. The numbers of day in the fridge also range from a couple of days to 2 weeks. Ok, here is what I did 2 cups of heavy cream 1/4 cup of butter milk All in a glas container (ceramic works as well, but not metal or plastic). I covered it with the respective cover, but did not press it down, so air could come in. I did let it stand for 24h on the stove. (I did not use the stove during this time at all). After 24h use a fork to mix things up and press the cover down and off to the fridge it went. The process was completed 3 days ago. Since then, here is the steak. A Really Great Steak With Marinade That Turns Into a Sauce

It takes time to marinate. Best if it goes over night into the fridge. This is a recipe that is in the family for many moons. This time I decided, to give it a my spin.  The marinade that is turning into your steak sauce. One needs (per steak you got) 3tbso sour cream 2 tbsp ketchup (use your favorite ketchup, it tastes better) onion slices to cover 2 sides of the stake (loosely) per steak 1 tbsp of lucky 32 southern kitchen voodo sauce (optional, that is my spin) Except the onions mix all the other things in a bowl with a spoon. Season the steaks with pepper (no salt to not get it dry). layer as follows: marinade onions slices steak onions marinade onion slices steak onions... marinade.... and so on. Put into the fridge at least over night. 24h is better.    About 1h before the steak should hit the grill remove it from the fridge, remove the steaks from the marinade, put them on plate and let it come up to room temperature. Cowboy Steak on my new Propane BBQ

During lunch time Ace Hardware delivered my BBQ. Dinner is secured.  The steak is defrosted. Sitting on the countertop to come up to room temperature. The BBQ is getting burned in. In the mean time 2 potatoes are getting cleaned, so I have some baked potatoes. After 20 min of burn-in time, they get onto the BBQ and 20 min later, the steak gets seasoned just with salt and pepper. And onto the BBQ it goes. Choose your cooking time based on your liking. I wanted to get mine medium. Hard seared from both sides, then temperature gets lowered for cooking.   -Mahlzeit-

Beef Filet with Potatoes, Sauteed Garlic Mushrooms and Cucumber Salad

It is almost weekend and that means smoking time. I went to BJ's, got myself a beef tenderloin and a few other things. The weekend can come. I trimmed the loin a bit, cut 5 steaks from it, and the rest went into larger chunks, so I can either smoke them or put them in the slow cooker. Potatoes: just cook them to your liking Sauteed Mushrooms: 1.5 cups of sliced mushroom (this time I used 50/50 white and baby bell mushrooms) 1/2 medium onion finely chopped 1 medium clove of garlic  pressed through the garlic presser 1 tsp of margarine 2 tbsp of sour creme salt, pepper   Melt the margarine in a frying pan, add the onions and let them get translucent. Add the mushroom and over medium low heat, start sauteing them. Add salt and pepper to taste. Once the mushrooms are cooked down and there is liquid in the pan, add the garlic and the source creme. Steak and Britta's Roesti Version (1)

 I had cooked potatoes left over from the weekend. A very traditional thing is to make pan friend potatoes with onions. I didn't want to go that far with all of this, so I came up with this. There was a thin sliced T-Bone steak in my fridge. Hm, steak with Britta's roesti version and a side salad. This really does not take that much time. May be 15 min if that. Heat a griddle to high. In the meantime season your steak to  your liking, (Fish is fine as well). Cut the left over potatoes to max 5mm slices and season. Spray the griddle with non-spray cooking spray or add some fat, so things don't stick. Add the meat and the potatoes, make sure the potatoes are laying flat. No pile ups :). Cook the steak to your liking. When you flip the steak, flip the potatoes as well. Serve with a side salad. -Mahlzeit -
