Bee's Light Spring Soup with Dumplings

It is only January. Sleet and freezing rain is in the forecast for the next 24 hours.
There is nothing better then a good soup, that reminds me of spring.

Soup:
1/2 celery root, cleaned and cut
4  carrots, cleaned and cut 
1 large onion coarsly cut
2tbsp of veggie oil
1 cup of spinach cut into stripes
1 pack of chicken stock
1 pack of chicken bone stock
1 can of green peas
flowers of 1 cauliflower head
thyme, all spice, 2 bay leaves, salt, pepper

Meat balls:
1 lbs of ground chicken 93/7
1/2 of an onion finely chopped
1 egg
bread crumbs, salt, pepper

Dumplings:
80g Semolina
40g butter at room temperature
1 egg
salt, nutmeg

Start with the dumplings, they need time to rest. Mix all of the ingredients in a bowl and let it stand at room temperature to rest.

In a Dutch Oven add the veggie oil, the celery root, carrots and onion. Sweat them over medium heat for about 7-10 min. Then add everything except the peas. Bring the temperature to a boil and then turn the temperature down to simmer.  Cover it.

While the soup simmers, mix all of the things for the meatballs. Form balls about 1 inch in diameter. I use an ice scoop to get then sized nicely.

Get another big pot with salt water to boil, we need that for the dumplings

After the soup has simmered for about 15 minutes, add the meatballs into the soup, cover it again and let it simmer.

Form the dumpling mass to small rolls 1/2 inch long and and about the thickness of your ring finger.
Dumplings need room. Depending on the size of your pot, you may have to do them batches.
Drop them into the boiling water and turn down the heat a bit. It should only simmer. Sometimes they stick to the bottom, so take a wooden spoon and make sure they don't stick. Be careful, you don't want them to break.
After they come up to the top, wait for about 5 minutes, take them out and add them to the soup.
Now it is time to find a meat ball in the soup and see if they are all cooked through. Check the dumplings as well, if they have 2 different colors, let all of it simmer for a bit longer.

Now season all with a bit of salt and pepper to taste.
Serve with a fresh slice of bread.
