Plain Sourdough Bread

After my sourdough starter went funny at the end of last week, I had to skip last weekend. I really missed to have some good bread. So this week was time to get back into it: 1 cup of sourdough starter 1 cup of King Arthur bread flower 1 cup of organic all purpose white flower 1 tsp salt. 1 3/4 tsb of instant dry yeast 3/4 cup of luke warm water Mix everything on low speed with a dough hook in a kitchen machine until it is smooth (about 5-7 minutes). Remove the hook and put the bowl somewhere warm for 90-120 min. The dough will rise. Then grease a baking form. Don't be afraid to experiment with different forms. This time  I use a rectangular one. Transfer the dough in to it, spread it out. Let it stand for another hour in a warm place. The dough will rise again. The preheat the oven to 425F. Bake for about 30 min. My oven usually needs a bit more time. Check during the last minutes on how dark the bread is and adjust time according to your liking. When

This year I started a new tradition. Every weekend I bake a small bread that lasts me through the week. Last week, I screwed it up a bit and it turned out a bit on the sweet side. However that got me a few ideas. This week I decided let's put in some flavor. I love Old Bay seasoning. So here we go. 1 cup of all-purpose flower 1 cup of King Arthur bread flower 1 tsp of salt 1 1/2 tsp of dry yeast 3/4 cup of ripe sourdough starter ( I eyeball that one) 3/4 cup of lukewarm water 1tsp of old bay seasoning. Bee's Light Spring Soup with Dumplings

It is only January. Sleet and freezing rain is in the forecast for the next 24 hours. There is nothing better then a good soup, that reminds me of spring. Soup: 1/2 celery root, cleaned and cut 4  carrots, cleaned and cut  1 large onion coarsly cut 2tbsp of veggie oil 1 cup of spinach cut into stripes 1 pack of chicken stock 1 pack of chicken bone stock 1 can of green peas flowers of 1 cauliflower head thyme, all spice, 2 bay leaves, salt, pepper Meat balls: 1 lbs of ground chicken 93/7 1/2 of an onion finely chopped 1 egg bread crumbs, salt, pepper Dumplings: 80g Semolina 40g butter at room temperature 1 egg salt, nutmeg Start with the dumplings, they need time to rest. Mix all of the ingredients in a bowl and let it stand at room temperature to rest. In a Dutch Oven add the veggie oil, the celery root, carrots and onion. Sweat them over medium heat for about 7-10 min. Then add everything except the peas. Bring the temperature to a boil and then turn the t
