Black Forest Cake

The original recipe is posted here. There are some differences between between what is used in the steps vs the list of ingredients required. This is my version. It turned out really good. 
As this is a German recipe, I recommend to get a scale that understands metric and has at least 1 digit behind the comma.

For the cake:
  • 4 eggs
  • 1 pinch of salt
  • 180g sugar (6.35 oz)
  • 75g all purpose flower (2.64oz) (Hershey's cocoa 100% cocoa unsweetened)
  • 75g corn starch (2.64oz)
  • 25g cocoa (0.88oz)
  • 1/2 tsp of vanilla extract
  • 5 tbsp cold water 
  • 3 tsp baking powder
For the cherry filling:
  • 1 glas of cherries  OR 2 cups of fresh cherries and 1.2 cups of water (some sugar)
  • juice of 1/2 lemon
  • 1 tbsp of corn starch
  • 2 tbsp of cherry vodka (optional)
The cherry filling can be cooked a day ahead and stored in the fridge.
If the cherries are from a glas, add the cherries with the liquid, the lemon juice the vodka to a pot and bring to a boil. Then add the corn starch, let it get thick, turn off the heat and let it cool down. 
If this are fresh cherries, add the cherries, water, lemon juice and vodka to a pot, bring to a boil and simmer for about 15 minutes. Then add the starch, let it thicken and turn off the heat.
 
Icing:
  • 1.5 packages of whip creme
  • 1 tsp of vanilla extract
Step 1
Separate the egg white from the egg yolk and add the whites to a bowl for a stand mixer. 

Step 2
Mix the flower, cornstarch kakao baking powder in a bowl.

Step 3
Line the bottom of a 26cm spring form with parchment paper and grease the sides with margarine, set aside

Step 4 
Preheat the oven to 150C (gas) (300F).
 
Step 5
Add the bowl with the egg whites onto the stand mixer and beat on 5. Add the salt and slowly drizzle in the sugar. Once it starts to get thick, add 1 yolk at the time and keep mixing.
 
Step 6
Sift the flower, cocoa mixture over the egg white mixture and keep mixing until it is all incorporated.

Step 7
Add the cake butter to the spring form and bake for 30 minutes. Check if the baking is complete with a tooth pick. Nothing should be sticking anymore.
 
Step 8
Remove the form from the oven, let it cool down for 15 minutes, then remove it from the spring form and let it cool down for 3 hours.
 
My cake never rises that much, that I actually can get 3 slices out of it. So be it, 2 are just fine.
 
For the icing
Just mix all of this with a stand mixer on high. Make sure the bowl and the whisk are cleaned with hot water, otherwise the whip creme may not get stiff.
 
Assembly
Add some cherry vodka onto the cake layer. How much is up to you. Then some whip creme, a layer of the cherry compo. Turn over the top layer and add some cherry vodka. Turn it back over and put it on top of the cake. Now ice everything with the whip creme.
Garnish the top with some maraschino cherries and chocolate shavings. Real black forest cake has chocolate shavings on the side as well. Nobody sais, I cant use chocolate chips.

Note: I usually order Kirschwasser from CA, but didn't want to wait. The local liquor store only had 1 kind of cherry vodka and that bottle was cheap. So the choices were, to buy or not to buy. It actually fully does the job for the cake.
