Easy Way to Make Salmon

This week was very busy at work. My outlet is cooking something nice on the weekend. 
After all the meat, Salmon is in order.
I went to Wegman's grocery shopping as I had an appointment close by. The store is usually very expensive, but once a quarter I treat myself to spend some money there.
I got 2 nicely cut 6oz of salmon and lots of other goodies. I will talk about those in future posts.
 
The plan: Salmon filet with  potatoes, German cucumber salad and as desert cucumber, melon, feta salad

 Melon, Cucumber, Feta Salad

The melon, cucumber salad take the most time as it should be marinating overnight in the fridge.
  • 1/2 cucumber (peeled or not, your choice), sliced into 5mm slices (the thickness of your little finger where there nail is). Then quarter the slices
  • 1 cup of grape tomatoes cut in half
  • 1/2 cup of feta (crumbles or little chunks)
  • 1 tsp of onions finely chopped
  • 2 cups of melon cut into bite size chunks
  • 2 tbsp olive oil
  • 3-4 sprigs of fresh mint
In a bowl mix all of this, season with a bit salt and pepper, cover and into the fridge for overnight it goes.

Potatoes

Peel, cut into smaller pieces, cook in salt water until done. Drain and let all the remaining water escape over some heat. Then turn off the heat.
 

 German Cucumber Salad

This is how I grew up eating cumber salad.
  • 1/2 cucumber peeled and sliced with a cucumber slicer (search on Amazaon for Westmark Cucumber Slicer Steel)
  • 1 tsp of finely chopped onions (optional)
  • 1 tsp sugar
  • 2 tbsp white vinegar
  • 2 tbsp of water
  • 1 tsp of fresh chopped dill
  • salt and pepper to taste
In a small bowl, mix the vinegar, water, sugar and salt and stir so all of it dissolves. Now add everything to a larger ball and mix well. Let stand at room temperature.

Salmon

We need 
  • skinless salmon filet
  • salt and pepper
  • 1 tsp of margarine
  • 1 tsp of fresh lemon juice
  • 1 tsp of fresh chopped dill
Heat the margarine in a skillet over medium heat. Season the salmon with salt and pepper on both sides. Add to the skillet, turn the heat to medium low and cover. Depending on the thickness of the salmon times may vary. I turned mine over after 5 minutes and then back after 5 minutes again. The thickest part did not have any pink showing on the side anymore. So 2 more minutes. Then turn the heat off and start plating.
Drip the lemon juice over the filet and drizzle the fresh dill over it.
Use the pan fat to put over the potatoes.
